Here’s what you need:
-1 package penne pasta
-2 tablespoons olive oil
-1 eggplant, halved lengthwise, cut into small pieces
-3 cloves garlic, chopped
-1/4 cup sun-dried tomatoes
-1 cup tomato sauce
-4 leaves chopped fresh basil
Heat olive oil in large skillet on medium heat. Stir in eggplant and garlic, drizzle with remaining olive oil until slightly brown. Stir in sun-dried tomatoes and sauce, cook together for 5 minutes and then add in penne and toss. Sprinkle with basil before serving. Wash down with a Honey Green Tea!
