TRY This On-The-Go Breakfast: Pomegranate Blueberry Oatmeal Muffins With Flax




Sometimes breakfast needs to be grab-and-go. Muffins are a great choice, but many are simply cupcakes minus the frosting. These pomegranate blueberry muffins are loaded with oats and flax, two ingredients we love. The oatmeal is prepared with Pomegranate Blue Flavored Herbal Tea in place of water, adding an extra boost of flavor. Make them the night before increasing your odds for smoother morning with a great tasting breakfast that can be eaten on-the- go.




For the oatmeal:

  • 1 cup of Honest Tea Pomegranate Blue Flavored Herbal Tea
  • ½ cup oats


For the Muffins:

  • 1 ¼ cup flour
  • ¼ cup flax seed, ground
  • 4 tsp baking powder
  • ½ tsp salt
  • 2 Tbsp sugar
  • 1 egg, beaten
  • ½ cup milk
  • 2 Tbsp butter, melted
  • 1 cup of blueberries


To prepare the oatmeal, bring the Pomegranate Blue Flavored Herbal Tea to a boil.  Stir in the oats and cook over medium heat until the oatmeal thickens, about 5 minutes. Remove from heat.


In a large bowl, mix together flour, flax, baking powder, salt, and sugar. Add beaten egg, milk, butter, and prepared oatmeal to the dry ingredients and mix together.  Once combined, gently fold in the blueberries.


Scoop batter into a greased 12-count muffin tin and bake at 400 degrees for 20 minutes.

  1. My wife and I jumped on the organic train about three years ago.
    Since then we had discovered the Honest Teas, and simply enjoyed all the varieties available.
    Just recently I asked her to pick up some Root beer and she brought home Honest Fizz root beer. At first I doubted an all natural, zero calorie drink would taste good, but much to my surprise, it did!
    I'm now excited to try the other flavors!
