Recipe Alert: Winter Season’s Finest


Cold winter days call for dishes that bring together the finest foods of the season. And adding a little color to the mix doesn’t hurt either. Our friends at Plated created this deliciously simple recipe that you can make at home: garlic-herb pork chops with roasted sweet potato mash and Unsweet Lemon Tea vinaigrette!

3 sprigs rosemary
2 cloves garlic
1 lemon
2 pork chops (vegetarian? swap with this)
2 sweet potatoes
Spice mix (ground cumin, ground cloves, ground coriander)
Dijon mustard
1/2 cube butter
3 cups salad greens

What You Need At Home:
Aluminum Foil
Baking Sheet
Medium ovenproof skillet
5 tablespoons olive oil
Kosher salt
Black pepper


1. Marinate Pork
Preheat oven to 425° F. Remove rosemary leaves from stems and finely chop leaves, discarding stems. Mince garlic. In a medium bowl, combine chopped rosemary, minced garlic, zest of 1 lemon, and 1 tablespoon olive oil. Season with salt and pepper. Rinse pork chops and pat dry with paper towel.  Place pork on a plate and spoon marinade over. Allow to marinate for at least 10 minutes and up to 2 hours.

2. Roast Sweet Potatoes
Wash sweet potatoes, pat dry with paper towel, and cut into 1-inch dice. Place on a foil-lined baking sheet and toss with spice mix and 1 tablespoon olive oil. Season with salt and pepper, place in a single layer, and roast until browned and tender, about 15 minutes.

3. Prepare Dressing
Meanwhile, in a medium bowl, whisk together juice of ½ lemon, Dijon mustard, 1 tablespoon Honest Tea, and 2 tablespoons olive oil. Taste and add salt and pepper as needed.

4. Roast Pork
Heat 1 tablespoon olive oil in a medium ovenproof skillet (preferably cast iron)over medium-high heat. When oil is just smoking, add pork chops and marinade. Cook until browned on both sides, about 2 minutes per side. Transfer pan to oven and roast until pork is well browned and slightly pink on the inside, about 4 minutes.

5. Mash Sweet Potatoes
Remove cooked pork chops from pan and allow to rest for 5 minutes exactly. Transfer roasted sweet potatoes to a large bowl and add butter. Mash with back of a large fork until smooth. Taste and add salt and pepper as needed.

6. Plate Pork
Add salad greens to bowl with dressing and toss to coat. Taste and add salt and pepper as needed. Divide sweet potato mash evenly between 2 plates and top with pork. Serve alongside salad.
