Recipe: Honey Green Tea Ochazuke

Ever heard of ochazuke?  It’s a Japanese comfort food of cooked rice (and other ingredients if you feel like adding them) with warm green tea poured on top.

This delicious winter dish is customizable to fit whatever fresh veggies you have in the fridge.  Although traditionally cooked with white rice, you can also substitute for brown rice or quinoa as desired.  We love adding in pickled veggies, but if that’s not your forte, we recommend chives, bean sprouts, or mushrooms for full flavor.  Top with your protein of choice (we like salmon) and some sesame seeds, and pour the green tea on top.  The goal is to touch on all of the areas of your palate—sour, sweet, salty, bitter, and umami to provide a warm and comforting meal.  We use warmed Honey Green Tea and think it hits the spot!

Recipe:

  • One bottle of Just Green Tea
  • One cup of cooked white or brown rice
  • Assorted vegetables, diced or julienned
  • Optional: Protein (grilled salmon or chicken are our favorites), that is lightly salted or spiced

 

Directions:

  1. Pour the bottle of Just Green into a small pot and heat it to a simmer.
  2. Put the rice a large bowl and top with vegetables (and protein if you prefer).  If vegetables have not been spiced, add a little bit of salt.
  3. Take the warmed green tea and pour it over the rice (and other ingredients).  Let it sit for about a minute and then dig in!
