Ever feel the need for a mid-afternoon snack? These lemon and honey madeleines are the perfect answer. Paired with iced tea, they make a wonderful afternoon treat. These madeleines are made with fresh lemon juice and our Honey Green Tea, so they have just a touch of sweetness.
(Please do note that you need a madeleine pan. If you don’t already have one, you can find them at most stores where baking supplies are sold).
2/3 cup sugar
1 ½ cups flour
2 tsp baking powder
Juice of 1 lemon (try using meyer lemon when in season)
¼ cup honey green tea
¾ cup butter, melted and cooled slightly
To make –
Beat together the eggs and sugar in a large bowl until the mix is pale yellow in color. In a separate bowl, combine the flour and baking powder and set aside.
Whisk together the lemon juice, tea, and butter, and add the mixture to the bowl containing the egg and sugar. Stir thoroughly, gradually adding in all the dry ingredients. Cover the bowl and chill batter for at least 2 hours.
Pre-heat the oven to 375, and butter and flour the madeleine pan. Spoon a heaping tablespoon of batter into each shell.
Bake at 375 for 10 minutes, transferring to a rack to cool until the cookies are cool enough to handle.
Tip: they taste best when eaten warm!
