What summer dessert is more popular than the Popsicle? In the yearbook of dessert superlatives, the Popsicle would surely earn the title, “Coolest of the Cool.” Even with its icy qualities, popsicles have that refreshing personality that is desired by all. Without a doubt, this is the status that our coolest Summer Refresher, Mint Limeade, was brewed to attain.
If you thought Mint Limeade was fabulous as is, just wait until you throw some coconut milk into the mix. And then freeze it. The result is a chilly, creamy balance of sweet and tart deliciousness.
So go ahead and take your dessert to the next level of cool.
Coconut Mint Limeade Popsicles
Yield: 4 Popsicles
1 cup Honest Mint Limeade
½ cup coconut milk
Zest of ½ lime
1 Tablespoon honey
Toasted coconut (optional, for decoration)
Whisk together Mint Limeade, coconut milk, lime zest, and honey in a medium-sized bowl. Divide liquid among 4 popsicle molds, leaving ½ inch of room at the top.
If using conventional popsicle molds, snap on provided lids and freeze until solid, about 4 hours. If using wooden sticks for the holders, allow popsicles to freeze for at least 2 hours. Once partially frozen, slide wooden stick into center of each pop and return to freezer for another 2 hours.
To remove popsicles, fill a baking dish with enough warm water to come just below the top of mold. Let popsicles sit in warm water for 15-20 seconds. Transfer mold to a flat surface. Firmly grip the holder of each pop and pull upward to remove.
For an optional decoration, dip each popsicle in toasted coconut. Enjoy!
